Mace

Origin
Originally from the Banda Islands in Indonesia. Grown in India, Sri Lanka and Latin America.

Flavor
Mace is the skin that covers nutmeg. It has a wood-like smell, and a powerful but slightly bitter flavor. It is more delicate than nutmeg.

General benefits
Stimulates digestion, antispasmodic, prevents bloating, antiseptic, anti-inflammatory, sedative and hallucinogenic.

Ayurvedic properties
The taste is astringent, soft, warm and light. Reduces Vata and Kapha.

Culinary uses
It gives delicacy to potatoes and vegetables. Marries well with cabbage, as well as being good in stews, cheese casseroles and desserts such as apple sauce or pears.
